Chicken and Veggie Stir Fry

Chicken and Vegetable Stir-Fry Recipe

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon hoisin sauce

  • 1 teaspoon sesame oil

  • 2 tablespoons vegetable oil, divided

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 1 onion, thinly sliced

  • 1 bell pepper, thinly sliced

  • 1 carrot, julienned

  • 1 cup broccoli florets

  • 1 cup snap peas, ends trimmed

  • Salt and pepper to taste

  • 2 green onions, sliced (for garnish)

  • Sesame seeds (for garnish)

  • Cooked rice or noodles for serving

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the thinly sliced chicken with soy sauce, oyster sauce, hoisin sauce, and sesame oil. Let it marinate for at least 15-20 minutes.

  2. Prepare the Vegetables:

    • While the chicken is marinating, prepare the vegetables. Slice the onion, bell pepper, and carrot. Cut the broccoli into small florets and trim the snap peas.

  3. Heat the Pan:

    • Heat 1 tablespoon of avocado oil in a large wok or skillet over high heat.

  4. Stir-Fry the Chicken:

    • Add the marinated chicken to the hot pan and stir-fry for about 2-3 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the pan and set it aside.

  5. Stir-Fry the Vegetables:

    • In the same pan, add the remaining 1 tablespoon of oil.

    • Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

    • Add the sliced onion and stir-fry for 1-2 minutes until it begins to soften.

  6. Add Remaining Vegetables:

    • Add the julienned carrot, bell pepper, broccoli florets, and snap peas to the pan.

    • Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  7. Combine and Season:

    • Return the cooked chicken to the pan with the vegetables.

    • Toss everything together and stir-fry for an additional 1-2 minutes to heat through.

  8. Adjust Seasoning:

    • Taste and adjust the seasoning with salt and pepper as needed. Keep in mind that the sauces used already contain some salt.

  9. Serve:

    • Serve the chicken and vegetable stir-fry over cooked rice or noodles.

  10. Garnish:

    • Garnish the dish with sliced green onions and a sprinkle of sesame seeds.

  11. Enjoy:

    • Serve your delicious chicken and vegetable stir-fry immediately.
