Chicken Parmesan
Easy chicken parm recipe. Great with pasta of your choice or even a side of steamed veggies.
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs
2 cups breadcrumbs (preferably Italian-style)
1 cup grated Parmesan cheese
1 cup mozzarella cheese, shredded
2 cups marinara sauce
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
Fresh basil leaves, for garnish
Chopped parsley, for garnish
Cooking spray
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Chicken:
Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound them with a meat mallet to an even thickness, about 1/2 inch.
Season both sides of the chicken breasts with salt and pepper.
Coating Station:
In three separate shallow dishes, set up a coating station. Place flour in the first dish, beaten eggs in the second dish, and a mixture of breadcrumbs and grated Parmesan cheese in the third dish.
Coat the Chicken:
Dredge each chicken breast in the flour, shaking off any excess.
Dip the floured chicken into the beaten eggs, allowing any excess to drip off.
Coat the chicken with the breadcrumb-Parmesan mixture, pressing gently to adhere.
Pan-Fry the Chicken:
In a large oven-safe skillet, heat olive oil over medium-high heat.
Add the breaded chicken breasts and cook for about 3-4 minutes on each side, or until the coating is golden brown and the chicken is cooked through. You may need to do this in batches depending on the size of your skillet.
Assemble in the Skillet:
Spoon marinara sauce over each chicken breast in the skillet.
Sprinkle shredded mozzarella cheese over the sauce.
Sprinkle dried oregano, dried basil, and garlic powder evenly over the cheese.
Bake in the Oven:
Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Once out of the oven, garnish with fresh basil leaves and chopped parsley.
Serve:
Serve the Chicken Parmesan over cooked spaghetti or your favorite pasta, or with a side of garlic bread or a salad.
