Pineapple Fried Rice
Pineapple fried rice is a delicious and colorful dish that combines the sweetness of pineapple with savory flavors. Here's a basic recipe for pineapple fried rice with steps and ingredients. You can customize it to your taste by adding protein like chicken, shrimp, or tofu.


Ingredients:
For the Fried Rice:
2-3 cups cooked short grain white rice (preferably day-old and chilled)
1/2 cup diced carrots
1/2 cup frozen peas
2-3 tablespoons avocado oil
Salt and pepper to taste
2 eggs
For the Sauce:
The sauce can be made to taste. For up to 3 cups of cooked rice I recommend about a cup of the mixture.
3 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon garlic paste
1/4 cup of diced pineapple
1 tablespoon of gochujang paste
2 tablespoons of Bachan's hot and spicy sauce.
Optional Protein Additions:
1 cup cooked and diced chicken, shrimp, or tofu
(I used 1lb of ground chicken breast)
Garnish:
Chopped green onions
Fresh cilantro leaves
Cashews or peanuts (for extra crunch)
Sesame seed oil
Instructions:
Prep the Ingredients:
Cook the rice in advance and let it cool. It's best to use chilled rice for fried rice.
Chop any additional veggies or garnish you want to add in.
Prep your sauce:
Mix your sauce ingredients above and optionally blend if you want a thinner consistency. Add additional soy sauce do reach your desired taste and saltiness.
Heat the Wok/Pan/Griddle:
Heat a wok or a large skillet over medium-high heat. Add 2-3 tablespoons of oil and let it heat up.
Cook the Protein:
If you're using chicken, shrimp, or tofu, add it to the hot pan and stir-fry until cooked through. Remove and set aside.
Saute the Vegetables:
Add the peas and carrots and stir-fry for 2-3 minutes until they start to soften.
Add Rice:
Add the chilled cooked rice to the pan. Use a spatula or wooden spoon to break up any clumps and evenly combine it with the vegetables and pineapple.
Add Egg:
Scramble two eggs separate from the rice mix
Once cooked add back in to the combined rice mix.
Combine:
Combine all ingredients together and mix thoroughly.
Season and Flavor:
Drizzle sesame seed oil on top
Add black sesame seeds
Season with salt and pepper to taste. Adjust the seasoning as needed.
Finish and Garnish:
Continue to stir-fry for another 2-3 minutes until everything is heated through and well combined.
Serve:
Transfer the pineapple fried rice to serving plates or a serving platter.
Garnish with chopped green onions, fresh cilantro leaves, and cashews or peanuts for extra crunch.
If you're feeling adventurous serve inside of a fresh shell of a pineapple.
