Turkey Queso Dip

Ingredients:

For the Turkey:

  • 1 pound ground turkey

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons of Lawry's Casero Pollo Asado

  • Salt and pepper to taste

  • 1 tablespoon olive oil or tallow

  • 1 can rinsed/drained black beans (optional)

For the Queso Dip:

  • 8 ounces (about 2 cups) shredded cheddar cheese

  • 8 ounces (about 2 cups) shredded Monterey Jack cheese

  • 1 can (10 ounces) diced tomatoes with green chilies (such as Rotel)

  • 1/2 cup milk

  • (If you're in a pinch us a jar of your favorite white queso dip)

  • Chopped fresh cilantro, tomato, and avocado for garnish (optional)

  • Tortilla chips, sliced bell peppers, or sliced baguette, for serving

Instructions:

1. Prepare the Turkey:

  • In a large cast iron skillet, heat the oil over medium-high heat.

  • Add the chopped onion and garlic to the skillet and sauté for about 2-3 minutes until softened.

  • Add the ground turkey, and seasonings to the skillet. Cook the turkey, breaking it apart with a spoon, until it's browned and cooked through, usually about 5-7 minutes. Drain any excess grease and set the turkey aside.

  • Add black beans towards the end of cooking (optional)

2. Prepare the Queso Dip:

  • In a separate saucepan, melt the shredded cheddar and Monterey Jack cheeses over medium-low heat. Stir continuously until the cheese is fully melted and smooth.

  • Add milk to get to your desired consistency

  • Add the diced tomatoes with green chilies, chili powder, cumin, salt, and pepper to the cheese mixture. Stir well to combine.

3. Combine Turkey and Queso:

  • Add the cooked turkey mixture to the queso dip and stir until everything is well combined. Let it simmer for an additional 2-3 minutes to heat through.

4. Serve:

  • Transfer the turkey queso to a serving dish.

  • Garnish with chopped fresh cilantro, tomato, and diced avocado if desired.
